Tremendous mashed potato with Shiitake… irresistible!
- 500 gr potatoes
- 200 gr of organic oak shiitake
- 1 spring onion
- A few shoots of chives
- 50 g butter
- 1 tablespoon olive oil
- Pinch of salt and black pepper
Cut the shiitake mushrooms into small cubes and remove the stems and set aside.
Boil the peeled potatoes with a little salt and the shiitake mushroom stems.
Sauté the mushrooms for 10 minutes with the finely diced chives.
Drain the potatoes and mash them in a potato masher and add the butter.
Mix the puree with the mushrooms and the spring onion.
Add the chopped chives, a pinch of nutmeg, salt and freshly ground black pepper.
