
Ingredients
- 250g of Maitake
- Garlic
- Black pepper
- Olive oil
For the mashed potato
- 500g potato
- 1 leek
- 1 onion
- 1/2 fresh fennel
- 100ml cream
To prepare the maitake, without washing it, place it over a medium/slow heat in a frying pan, covered, with a dash of olive oil and salt.
When it has softened a little, add the chopped garlic, uncover and turn the heat up to maximum so that it browns, stirring constantly.
To make the purée, fry the onion with the chopped leek and fennel and add the previously cooked potatoes. Leave to cook for a few more minutes, remove from the heat and add the cream to whisk it all together.
Serve the mushrooms on top of the purée before they cool…and enjoy!
