Surprise yourself with this classic Asturian recipe but without meat!
Ingredients for 1 cahopo
- 2 large Shiitakes
- 1 slice of goat cheese
- 2 roasted piquillo peppers
- 1 egg
- Breadcrumbs
- Olive oil
- Salt
Preparation
Place a griddle or frying pan over high heat.
Cut the stems off the shiitake mushrooms and place them on the griddle with a little oil for 5 minutes on each side until golden brown and soft.
Take them out and put the cheese and the piquillo peppers on top of one of them.
Place the other mushroom on top and coat the “sandwich” first in beaten egg and then in breadcrumbs.
Then fry in plenty of oil or bake in the oven until golden brown.
You can fill them with any other ingredients you like!
