Shiitake (Lentinula edodes)
Shiitake (Lentinula edodes), derived from the Japanese ‘shii-take’ (Shii tree mushroom), is a mushroom that grows naturally on the wood of certain slow-growing trees. It has been traditionally cultivated on trunks for over 700 years in Japan and China, where traditional medicine attributes healing and invigorating properties to it.
The nutritional and medicinal properties of shiitake give it the status of a “superfood”. With a low proportion of fat, it provides a high supply of protein, vitamin D and other minerals. It also has important immune-boosting (antibacterial and antiviral), anti-tumour and cholesterol-lowering properties.
It is also an anti-ageing food as it contains antioxidants and maintains adequate levels of growth hormone.
