Judas Ear
The Judas Ear (Auricularia auricula-judae) is largely unknown in Europe, but it is a fascinating mushroom because of its particular crunchy texture and mild flavour. Widely used in Asian and Thai cuisine, it is a very popular mushroom in traditional Chinese and Thai soups and stir-fries.
On a nutritional level, it is also a very interesting mushroom due to its high protein content and its antibiotic properties.
