Shiitake is a mushroom with a deep, earthy flavour that evokes the damp forest floor. But if we want to enjoy all its natural aroma and texture, the best choice is shiitake cultivated on oak logs, like we do at Fungi natur. This traditional method respects nature’s cycles and results in mushrooms with a much more authentic flavour than those grown on artificial substrates.
Today we’ll show you how to prepare it “al ajillo”, a classic recipe that enhances its taste without masking it. Ideal as a starter, side dish or even as the base for a more elaborate meal.
Ingredients (for 2 people):
- 250 g fresh shiitake (cultivated on oak logs, like those from Fungi natur)
- 4 garlic cloves
- 4 tablespoons extra virgin olive oil
- A splash of white wine (optional)
- Salt to taste
- Fresh chopped parsley
- A pinch of chilli or cayenne pepper (optional)
Step-by-step preparation:
1. Gently clean the shiitake
Use a damp cloth or kitchen brush to remove any soil. Avoid rinsing them under water so they don’t lose their texture and aroma.
2. Cut with style
Slice them into medium pieces. If they’re small, you can leave them whole.
3. Garlic and aroma
Slice the garlic and gently sauté it in a pan with olive oil. If you like a spicy touch, add a pinch of chilli.
4. The star enters
Add the shiitake and sauté for 5 to 7 minutes over medium-high heat, stirring so they brown evenly. Add salt to taste.
5. A touch of wine
Optionally, add a splash of white wine and let it evaporate for one or two minutes.
6. Finish with freshness
Sprinkle with chopped parsley just before serving.

- Served with rustic bread or on toast
- As a side for meat, fish or tofu
